Karaage ( soy-marinated fried chicken )

Karaage (pronounced as ka-Ra-Ah-geh) is a popular Japanese version of fried chicken which is marinated in soy-sauce and is an all-around dish enjoyed by most people. From being a household staple to being served on special occasions, it is suitable for any event.

Instructions

1. Make the garlic and ginger soy sauce by combining the ingredients together (add Sake here)
2. Cut the chicken into large bite-size pieces and lightly sprinkle some salt
3. Cover the chicken with garlic and ginger soy sauce in a bowl or in a ziplock bag (leave for at least 10min or up to 30min)
4. Drain the liquid and combine with potato/cornstarch and flour and coat each piece of chicken
5. Deep fry in hot oil at around 185℃
6. When the chicken is a golden colour and crispy on the outside, remove it from the oil and drain on a rack
7. Serve with any of the condiments

Ingredients

600g boneless chicken thighs
Salt
1 tbsp sake (optional-sake is a Japanese alcoholic beverage made from fermented rice)
Garlic and ginger soy sauce
2 tbsp soy sauce
1clove garlic grated
1 tbsp grated ginger
5 tbsp potato starch or cornstarch
3 tbsp all-purpose flour(or simply use 8 tbsp potato starch)
Sunflower oil or any kind of oil (for deep fry)

Lemon/lime
Mayonnaise
Chilli pepper
